Low Carb Frosted Blueberry Lemonade
With temperatures as high as 90 today, it was time to make a refreshing new version of lemonade. Though this recipe is designed to be low carb, feel free to make your own version with your favorite ice cream or fruit flavor combo.
Ingredients
1/2 pint ice cream*
1/4 cup lemon juice
1/8 cup blueberries (frozen or fresh)
Whipped cream (optional)
Stevia or monkfruit sweetener (optional)
*Vanilla or a mild flavor is recommended; I used Rebel Butter Pecan Ice Cream.
Directions
Combine ice cream, lemon juice, and blueberries in a small blender. Mix until the color is uniform. To sweeten the lemon flavor you can add an optional teaspoon or two of stevia or monkfruit sweetener. Serve with whipped cream for a decorative and creamy flair.
